Australia recently agreed to discontinue the use of the term 'Port' in line with international labelling agreements, with 'Port' now used exclusively only by the Portuguese. 

Port has now been renamed commercially in Australia  as 'Tawny'  representing our own unique style and being generally produced from grape varieties including Shiraz, Grenache, Mourvèdre and Cabernet Sauvignon.  These varieties are grown on low-yielding vines in the warmest regions, including the Barossa and Rutherglen and produce wonderfully intense, rich, sweet grapes. 

Making your own Australian Tawny is very rewarding using our prepared kits and concentrates.

HOW IS PORT MADE. 

Essentially the grapes (or grape concentrate) is fermented until the wine reaches the desired sugar level, at which point fermentation is stopped and spirit (brandy)  added. By following this age old tradition of adding brandy in the final stages of fermentation (to halt fermentation early) you can make your own Tawny rich in residual grape flavour and more intense in colour. The added brandy will raise the alcohol level to between 15-20% alcohol by volume, which aids in maturing and preserving the tawny as a fortified wine.

Each Tawny concentrate is blended from a  selection of Australian red grape varieties,..... all natural quality ingredients, free from artificial flavours or colours, ensuring your results are truly professional.
