"Rolled/flaked Wheat is traditionally cleaned wheat that has been steamed and rolled into flat flakes under heavy rollers. Use up to 5% for increased foam, improved head retention and enhanced mouthfeel in any beer style. 

Because  the grain is unmalted, It does not possess the  enzymes required for conversion to sugars, so it must be mashed with base malts.
